Malatya apricots are picked by hand and dried in the sun for 3 to 4 days, before being slightly rehydrated to preserve their soft and melting texture. They are a healthy and practical snack, as well as the perfect food to add rich aromas to recipes (pastries, salads, granolas, etc.).

The Malatya apricot not only benefits from a favorable climate, but also from ancestral skills for its cultivation and drying. Simply dried under the July sun, apricot fruits retain all their nutritional value, especially rich in vitamins (A, B3, B5, C and K) and minerals (iron, magnesium, phosphorus and potassium). They also have a high fiber content which, among other benefits, prevents cardiovascular disease.

Being an early flowering tree, the apricot tree is at risk of losing its flowers and young buds due to late frosts that plague year after year. These can wipe out the income of Malatya farmers for a whole year: heat candles were therefore offered to warm the orchards during the cold nights.
