Prémices d'avril is the very first product Vallier has worked on, and the most difficult too! Dry, it has only been available since 2021. Taming maple as a fermentable material and expressing its aromas in a wine with little residual sugar was a great challenge, the fruit of many years of experimentation! As a dry or semi-dry wine, Prémices d'avril is straightforward, expressive and well-balanced.

On the nose and palate, the first impression is of a white wine with hints of pear, crisp apple and citrus. It's only on the finish that we recognize the fine maple notes and that it creates a surprise! Drink it with sausage and fresh goat's cheese, tapas, fish, grilled chicken or cheese fondue.

Prémices d'avril contains very few sulfites (below organic and biodynamic standards). -
In cocktails - Stir it in a shaker with crème de framboise or crème de cassis, a few mint leaves and ice, and you've got a beautifully revisited kir. Try it also in our white sangria.
At the table - Prémices d'avril is best served chilled.
