  • Susie Gluten Free Baking Flour (brown rice flour, white rice flour, potato starch, tapioca starch, sorghum flour, xanthan gum) baking powder.
  • Mix (425g) + your choice of sweetener (340g) = 765g muffin mix.
    6 large eggs, 1 cup (236g) butter*, 1 1/2 + 2 tbsp (340g) cane sugar*, 1 1/2 cups fruit, nuts, and/or chocolate chips * Baking time may vary depending on the sweetener used. * Dairy-free version: Substitute vegan margarine for butter. * Substitute a 1:1 sweetener for sugar.
    Yield: 24 muffins. 1. Preheat oven to 350°F (180°C). Use muffin liners. 2. In a bowl with a hand-held electric mixer, cream together the cane sugar and butter until light and fluffy. 3. Slowly add the eggs and mix until smooth and well incorporated, add the Susie Gluten Free Muffin Mix and mix until well incorporated. Add the fruit, nuts and/or chocolate chips and mix. Bake: for about 22 minutes or until a toothpick inserted in the center comes out clean.
