  • Susie Gluten Free Cake Flour (white rice flour, brown rice flour, potato starch, tapioca starch, sorghum flour, xanthan gum) baking powder, sea salt, baking soda, vanillin.
  • Mix (360g) + your choice of sweetener (290g) = 650g cake mix. 2 eggs + 2 egg whites * 2/3 cup + 2 tbsp (170g) butter * 1 1/2 cups (290g) cane sugar * 1 cup + 2 tbsp (240mL) milk * *Cooking time may vary depending on sweeteners. * Dairy-free version: Substitute milk with plant-based beverage or water. Substitute butter with vegan margarine. Substitute eggs with Susie Gluten-Free Egg Substitute. * Substitute a 1 to 1 ratio of sweetener for sugar.
    Yield: 2 x 6" 2-layer cakes (24 cupcakes) 1. Preheat oven to 350°C (180°F). Grease 4 x 6" cake pans or use cupcake liners. 2. In a bowl with a handheld electric mixer on medium speed, cream together the sugar and butter until light and fluffy, add the eggs and egg white, mix well. 3. Using Susie Gluten-Free Vanilla Cake Mix, add half the portion, mix well. Add the milk, and mix again. Add the remaining cake mix and mix again until smooth and well incorporated. Bake: cupcakes or cakes for about 20 minutes. Let cool.
