Made from organic raw milk from the herd of Holstein cows on the family farm, it is a firm, pressed and cooked farmhouse cheese with a washed rind. It is matured for eight months on wooden planks from the farm. Its orange rind has an aroma of undergrowth and mushrooms. Straw-yellow in color and dotted with small holes, its firm but supple paste reveals complex flavors of fruit, hazelnut, honey and a rustic woody touch, as evidenced by the cheesemaker in this video.
The cows are fed fresh grass in pastures with a variety of species, such as white clover, wild clover, trefoil, alfalfa, as well as grasses such as timothy and brome. This living agriculture brings to the cheese specific tastes of the terroir of Eastern townships, a region dotted with steep hillocks, valleys and mountains.
Alfred Bolduc is the founding ancestor of the Bolduc farm, the first to settle in Compton. Leaving Beauce at the beginning of the 20th century to exploit these rich and fertile Eastern townships lands, he founded his family there. Created in his honour, the Alfred Le Fermier cheese also underlines its belonging to the “farmer” category, that is to say a cheese made with the milk of a single herd.
