Thanks to a dryingphase in traditional ovens, the final producthas a granular appearance and uniform whitecolor. Its fundamental characteristics, such asconstancy in processing and excellentsolubility, allow to give the cheese a rich andlong-lasting flavor.

  • NaCl 96%, sodium benzonate 1%, chysomine, pepsine.
  • The dosage is determined by the quantity and quality of themilk, the desired manufacturing parameters (pH,temperature, coagulation time) and the concentration ofenzyme. The dosage should be diluted 10 to 20 times itsvolume in cold non-chlorinated water.
  • Store the original sealed containers in a cool and dry place after the arrival in your factory. The ideal storage temperature is +4°C/+8°C. The product tolerates room temperature during transport.
