The walnuts, harvested in the fall, are stored in the refrigerator until the master oil maker is ready to reduce them into pulp on the stone grindstone. The paste is then lightly roasted, just enough to bring out all the flavours . The ultimate step is to press the dough to collect a sublime oil.
Without GMOs, our walnut of Périgord oil provides a good intake of omega-3 and omega-6 essential fatty acids.
