This semi-firm cheese with a bloomy, ashy rind has a smooth, pale yellow to straw-coloured paste, depending on the season. On the nose, it has a pleasant scent of fresh, slightly tangy milk and undergrowth as it ages, while on the palate it reveals a melting texture with a buttery, nutty flavour. Champion 2019 at the International Cheese Competition (SIAL) and bronze medal in 2018 at the World Cheese Awards.
