The organic non-pasteurized soybean and rice miso is a gluten-free, multi-purpose condiment, mild in taste, full bodied and slightly salty. It has undergone a natural, uninterrupted fermentation process of at least 2 years. It contains only certified non-Gm organic ingredients:

- Whole organic soybeans high in protein content. They use locally or regionally produced soybeans from the Eastern Townships, central Quebec or the Mauricie region.
- Whole grain semi polished arborio rice from Italy. Having tried several types of rice from various parts of the world they opted for the round grain rice that lends itself best to fermentation and gives our miso its unique flavor.
- Sea salt.
- Natural spring water.
- The grain is inoculated with Aspergillus oryzae and lactic bacteria such as Pediococcus halophilus and Lactobacillus delbruekii.

    Du riz Arborio biologique entier, légèrement poli, qui nous vient d’Italie. Après avoir essayé plusieurs variétés de riz, en provenance de divers endroit du monde, ils ont opté pour ce riz à grain rond qui permet la meilleure fermentation et donne à notre miso cette saveur unique.
    Du sel de mer.
    De l’eau de source naturelle.
    Un inoculum fait d’Aspergillus oryzae et d’un groupe de bactéries lactiques, notamment, Pédiococcus halophilus et Lactobacillus delbruekii.
