Our maple syrup is called “The Rare Harvest” because the sap used to produce it is harvested earlier in the sugaring season. The result is a natural, light-colored confection with a delicately sweet and slightly woody taste. It goes wonderfully with fresh fruit desserts, pancakes or ice cream.

All-natural maple syrup contains vitamins (B1 and B2), minerals (calcium, iron, manganese, potassium and zinc), antioxidants (54 polyphenols), as well as abscisic and phaseic acids, namely plant hormones known to release insulin in the pancreas, to allow glucose to enter muscles and to lower blood sugar levels. This is one of the reasons maple syrup is better tolerated by diabetics.

The grade of a maple syrup has nothing to do with the quality. The color and taste vary depending on when the maple sap is harvested.
