Mousse des bois is made using the traditional method. After vinifying a white acer, a little maple syrup and yeast are added, and the wine is bottled immediately. The second fermentation in the bottle creates the carbon dioxide and thus the desired effervescence. Whether it's fruitier, with a lovely round maple finish at 7g sugar/liter, or more floral, undergrowth character at 0g sugar/liter, Mousse des bois presents the purest forest expression.
Brut zero dosage: A sparkling wine with character, expressing floral and mineral aromas, toasty flavors and a hint of bitterness on the finish. Really surprising, because you can taste the maple, even without sugar! It loves parties, oysters and shellfish, sashimi and fresh goat's cheese.
