The Gold balsamic vinegar of Modena is characterized by a density approaching that of a syrup and gives in the mouth a pleasant fruity persistence while not putting aside the intensity sought when consuming a vinegar. Dark and shiny, it is perfect for icing a stir-fry or a grill, for bread rolls with olive oil as well as for waking up cocktails. It can also be tasted alone.

Thereafter, the maturation of the balsamic vinegar takes place in barrels made with fine wood from the region, whether it is chestnut or mulberry.

The Gold balsamic vinegar of Modena has a density of 1.33% and an acidity of 6%, comparable to a vinegar aged 18-20 years, and offers a velvety taste and a fruity persistence in the mouth.
