There are nearly 40 species of oyster mushrooms, most of which are edible, but here we describe the oyster-shaped oyster mushroom (pleurotus ostreatus). Its hat, 5 to 15 cm in diameter, is shaped like a long convex spatula which widens to take the shape of a shell. Oyster mushrooms grow on dead wood or organic matter such as straw or bark, so it is not always necessary to clean them before preparing them. It is found mainly on beech trees, also on other species of dead or living trees (when diseased or damaged)
