It is the organic and now hypo-allergenic version of cornbread which is popular in certain countries such as Portugal. Wheat recently replaced by Kamut; However, the combination of this cereal with our proprietary fermentation process now makes it a low gluten bread (<1%). In addition, the corn used does not contain any genetically modified organisms (GMO). Furthermore, millet is rich in methionine, an essential amino acid that is deficient in legumes. There is no such thing as bread made from 100% corn.
