The chia seed has been known for millennia by various Mesoamerican cultures in Mexico and Guatemala. It comes from a species of tropical plant able to grow in a variety of environments: in Central America, it is cultivated for its seeds in the mountains, the pine forests and the equatorial jungle. This ability to adapt to various soils and climates has made chia seed an important staple food just as corn for a long time.

  • PREPARATION
    Mix 1 to 2 tbsp. of raw black chia seeds with a cup (250 ml) of liquid. Then let stand for at least 40 minutes or overnight. To make the equivalent of an egg, soak 1 tbsp. of chia in 3 tbsp. of water. They can be stored in the refrigerator for 2 to 3 days thereafter.

    USES
    There are several ways to incorporate chia seeds into your diet. You can add them whole or ground to various recipes (energy balls, chew bars, crackers, puddings, smoothies, dressings, etc.), sprinkle them on cereals, oatmeal and yogurt, and even use them as a substitute for egg in cakes, muffins and breads. To do this, simply dip a tablespoon of chia seeds in three tablespoons of water to make the equivalent of an egg. Note: When a significant amount of fiber is consumed daily (eg, chia seeds), nutritionists recommend drinking at least two liters of water per day to aid intestinal transit.

    In addition to being a vegetarian source of calcium, phosphorus, magnesium, potassium, zinc, iron and vitamin B9, chia seeds contain protein, omega 3 and 6 and are very high in fiber. Two tablespoons of chia seeds are equivalent to 28% of the recommended daily intake of fiber for adults aged 19 to 50 (equivalent to 25 g). Plus, since chia fiber is primarily soluble (it absorbs water, swells, and gels), it helps lower blood cholesterol, controls blood sugar, and prolongs satiety. Soluble fiber is recommended for people with IBS because it is gentler on the gut.

    The only difference between white and black chia seeds is that black seeds taste slightly more pronounced and have a more contrasting color in recipes than white seeds. Otherwise, their benefits and nutritional values are the same.
